What should my ideal weight be? What is the best way to reach and maintain this ideal weight?, I am a male, 53 years old. My height is 6'1", and I currently weight 210 pounds.
1) with my height and age, what should my ideal weight be? 2) what is the best way, probably using diet and regular exercise, to get to my ideal weight? 3) what exercises would be best to use to lose the weight?

1) Google for a height and weight chart to see what the healthy weight range is for your height.

2) Your body needs a certain amount of fuel (food) each day to stay alive and do any exercise/activities that you're involved in. If you eat slightly less than this amount then your body will burn fat to make up the difference. If you eat way less than this amount, you'll go into starvation mode and won't lose anything.

Figure out how many calories you need to eat each day to lose weight, how many extra calories you burn through exercise, and how many calories are in the foods you eat. You can do all of that here:

What would an ideal weight be for ballet?, I am 5'10" tall and am going to be starting ballet, what do you think an ideal weight would be for classes?
Trying to decide what I should do to get in shape for class.
How often should I work out?
If you dance how often do you practice?
What do you weigh and how tall are you, if you dance that is?
If you made it to pointe work, was worth all the hard work?

From your avitar, I am going to presume you are a guy. With men, it is sometimes difficult to arrive at an "ideal" weight. Much depends on your frame...the best thing to do is to just look in the mirror and if you look overweight - try to lose some.
I would not worry too much about "getting in shape" for class, because class will take care of that. You might work on stretching before you start.
You need to to take at least 2 1 1/2 hour classes a week, plus a 1 hour technique class - preferably a men's class taught by a retired male dancer.
Back when, I weighed about 190lbs at 6' tall and I had tremendous upper body strength (300lb bench press). I partnered with women over 6' tall and 165lbs.
I've had a lot of fun dancing over the years - and yes it was worth it. Good Luck
BTW men don't go on pointe
